Country 4: Chicken Adobo from The Philippines

Chicken Adobo from the Philippines is the fourth meal/country in this year long journey, and man oh man is it good! This is by far my favourite meal so far (I say meal because its difficult to compare this to the Alfajores, apples to oranges). I have to thank my friend Michael for suggesting this as a dish to make from the Philippines. I was super excited that my favourite food youtuber, Joshua Weissman, made a video on his Chicken Adobo recipe, so of course I had to follow it (https://bit.ly/3TmW5xF).


The recipe was relatively easy, essentially make a marinade, marinade the chicken in the fridge, sear the chicken and then braise it for a while. Before I even started cooking, I knew I would like this one because the marinade calls for 20 (!!!) cloves of garlic! Yes you read that right. No its not a typo. For someone like me who uses garlic in most meals, I was so excited when I saw that in the video.


Once cooked, I served the chicken over rice with a healthy amount of the sauce drizzled over it and green onions to garnish. The chicken was fall-off-the-bone tender, and the sauce (did I mention the garlic?) is so rich and flavourful that I may have had a couple spoonsful of it just straight.


Overall, I can't recommend this meal and this recipe enough. Thank you for reading and see you again for country/meal five. Please see the updated map below:
