
The third country recipe was a little outside my comfort zone because I'm not much of a baker, that is my wife's specialty so I normally leave that to her. However, these Colombian Alfajores cookies were fairly easy to make and were delicious! Thank you Val for giving me her family's recipe to try out.
Alfajores are essentially two cookies (similar to sugar cookies), with a layer of dulce de leche in between them and rolled in coconut shavings. They're really addictive and not overly sweet.
I had some fun with translating the original recipe from Spanish to English, like "Love until fully incorporated". I used the translate text from image function on google translate, and Val was kind of enough to let me share the recipe here:
Alfajores have been my favorite thing I've made so far in this adventure because I don't usually bake and they're something I have never even tried before making. Will definitely make them again!
