Country 25: Gözlemes from Turkey

The 25th meal (I cant believe I’m at 25!!) Is something my wife and I have been making for a few years actually: Gözlemes from Turkey. Think of these as almost a better, Turkish version Taco Bell Crunchwrap.

 

Gözlemes consist of a yogurt based dough wrapped around a filling and then pan-fried. We often serve it with some sort of yogurt mint sauce.

 

The filling for gözlemes  normally includes spinach and feta cheese, as well as other ingredients that vary from different recipes. For years we have been making them using this recipe (https://www.jocooks.com/recipes/turkish-gozleme-lamb/). The main filling for this is a mix of spices, ground lamb (I used ground regular beef because the price of ground lamb when I made this was crazy) onions and spinach. This is cooked together in a frying pan and then set aside to cool. The dough is made by mixing flour, water, salt and Greek yogurt. The dough is rolled out and then you fill the dough with the main filling, as well as chopped tomatoes, feta cheese and fresh herbs( chopped parsley, green onions and mint) and fold. Make sure you don’t overlap the edges to much when you fold them or you could be left with uncooked dough. As mentioned earlier, now you just pan-fry until golden brown.

 

These have been a staple for us for a reason, they are so tasty, fresh and filling, they travel easy so they’re great to pack for lunch.  Also, they’re fairly easy to make too! Nancy and I love them and would definitely recommend giving them a try sometime!
