
For my 23rd meal I made probably my wife’s favourite meal, German Pork Schnitzel (AKA Schweineschnitzel). This was something my mother-in-law made for my wife since she was a little kid so she was really over the moon that it was included in this little project of mine. Along with the schnitzel I made a lemon dill sauce as well as a warm German potato salad.
Making the schnitzel itself is quite easy, just pound out a thick cut pork chop until its nice and flat, then dredge and coat in a breadcrumb coating and shallow fry until cooked and golden brown. Pounding out the meat and cooking it fast that way makes for very tender meat.
To go along with the schnitzel was a German potato salad, which is essentially boiled potatoes (I used new potatoes) with onions and parsley in a vinaigrette. The best part about this is cooking the onions in the bacon fat and then tossing the potatoes and parsley in so the whole thing is smoky/bacon-y and sour from the vinegar. Definitely a great but heavy side!
The sauce was essentially a cream/ butter based sauce with fresh dill, lemon and garlic. I just simmered this until it thickened up and it nice and fresh with all the heavy ingredients of the meal!
Overall I think I definitely received my wife's approval for this version. It turned out really well, and the actual schnitzel part is probably one of the easiest proteins I’ve made so far on this, especially for how good it tasted! Definitely not an everyday meal with how filling it was, but 100% will be making this again.
