
For this next meal I chose jollof rice, which is essentially a rice dish cooked in a pepper, tomato and garlic sauce. Jollof rice is a staple at most African restaurants I’ve been to but is traced back to Nigeria or Ghana. It can be served as just a rice dish, or with meat like beef (like I made) or goat.
It Is a long process to make jollof rice because you have to stew the tomato/pepper/garlic mixture for a while before cooking the rice in it. Parboiled rice is also used to make it so that the rice doesn’t get to soggy when its cooked. I have never cooked with parboiled rice so that was also challenging because I was constantly checking to see if it was cooked and was too early every time (so lesson for next time, parboiled rice needs a lot of time).
I kind of used an amalgamation of recipes for this and it turned out really well. The neat was tender and the rice was really flavourful but I did cheat this one a little bit, the recipe asked for habaneros but I couldn’t find any so I used a habanero hot sauce I have in the fridge already, good enough I think.
Overall love this meal, and is going to become a staple for me as good comfort food meal. This was a really enjoyable one for me to make because I don’t think I have ever personally cooked any African dishes before so this is hopefully the first of many as I try to add to my repertoire.
